Traditional Kerry (Irish) Apple Cake Recipe
Most Irish cookbooks include a recipe for Traditional Kerry Apple Cake. Apparently, “Kerry” is a place in Ireland that is not only known for its beauty, but also for its apples. The apple of choice for this delicious, moist apple cake is Bramley, but Bramley apples aren’t generally available in the US, so Granny Smith apples are the closest substitute.

This recipe makes a dessert that is a cross between a pie and a cake. It has lots of apples that make it extra moist. This luscious cake can be served warm from the oven or at room temperature. You may want to top it with either whipped cream, or custard which is traditional in Ireland.

8 Servings

1 pound tart cooking apples, peeled, cored, and cut into chunks
2 tablespoons packed brown sugar

1 1/2 cups flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup sugar

1/2 cup butter

1 egg
1/2 cup milk

Powdered sugar for dusting

  1. Preheat oven to 350°.
  2. Spray an 8" springform pan with non-stick spray and line the bottom with parchment; spray the parchment.
  3. Place the apples in a bowl; toss the brown sugar over the apples.
  4. Measure the flour, salt, baking powder, and sugar into a fine strainer set over a mixing bowl; shake the dry ingredients through.
  5. Cut the butter into chunks and cut them in until the mixture resembles cornmeal; stir in the egg and milk.
  6. Add the apples and mix a minute with the mixer to incorporate the apples and their juice.
  7. Bake 50-60 minutes or until the cake is set and the apples are tender.
  8. Remove from the oven and let sit 10 minutes before removing the cake from the pan.
  9. Dust with powdered sugar.
  10. Let cool thoroughly before cutting into wedges.
