Almost Heydays Recipe
Remember those luscious Heyday cookies – wafers dipped in caramel and covered with chocolate and peanuts? Unfortunately, they were discontinued in the 80s and fans everywhere have been trying to duplicate them ever since. Some of the recipes found on the internet are very close to what Heyday lovers remember, but most of the recipes are quite time consuming. The following recipe for Almost Heydays isn’t exact, but is an easy way to make a full sheet pan of no-bake bars that will be reminiscent of the originals. These are quick and easy to make, and keep well for several weeks.

72 Bars

3 cups semi-sweet chocolate chips
2 cups chopped peanuts, divided
2 pounds vanilla sugar wafers
1 1/2 pounds ready-made caramel, such as Peters

  1. Preheat oven to 200°.
  2. Line an 11" x 17" jelly roll pan with parchment and spray with non-stick spray.
  3. Sprinkle half of the peanuts evenly over the parchment.
  4. Place the semi-sweet chocolate chips in the bowl of a food processor and process until finely chopped.
  5. Sprinkle half of the chopped chocolate chips over the peanuts.
  6. Place in the oven for 7 minutes; remove from the oven and press the vanilla sugar wafers down over the melty chocolate.
  7. Place the caramel in a large glass measuring cup that has been sprayed with non-stick spray; microwave one and 1/2 minutes.
  8. Remove from the microwave, stir, and microwave an additional minute.
  9. Stir and spread evenly over the sugar wafers.
  10. Sprinkle the remaining chopped chocolate chips over the caramel and the remaining peanuts over the chocolate.
  11. Place in the oven for 8 minutes.
  12. Remove from the oven, and with an offset spatula, spread evenly.
  13. Let the bars cool thoroughly before cutting into 72 bars or squares (6 across and 12 lengthwise). Store at room temperature.
